The Olive Pharm Recipes: Giant Greek Beans with Carrots and Parsley

Another nice traditional Greek recipe is presented by The Olive Pharm Team. We cooked it with special care and it’s ideal even for our vegeterian friends.

Let’s start. In order to cook these beans we need fresh vegetables. Spices and Extra Virgin Olive Oil is suitable for this recipe too.

Ingredients:

1/2 kg of giant greek beans
2 big tomatoes
2 big carrots
1 onion
parsley
6 spoons of Extra Virgin Olive Oil
salt
pepper
aromatic oregano
a small quantity of thyme

Optional:

2 small pieces of the white feta cheece as appetizer (it is ideal)

The appropriate preparation always is cleanliness. We wash the tomatoes, the onion, the parsley and the carrots. At first, we slice up the carrots in small pieces and the onion too. Then we cut the tomatoes in really small pieces. We slice up the parsley. We wash and rinse the giant beans. We now use a deep pan.

We place all of the above ingredients except for the feta cheese. It is a really colorful result. Be careful at this point: we pour some water (approximately 10 spoons ) in order to avoid burning the food. We place it in the oven for almost an hour. We may need to check it after 30 minutes in case it needs extra water.

The Olive Pharm Visits Dionysi: The Olive Pharm’s Farm in February

The Olive Pharm after HarvestingIn January, here in Crete we manage to finish the gathering of the juicy olives and produce The Extra Virgin Olive Oil. Afterwards in February, the trees need nutrition and pruning in order to obtain new branches and more olives as far as the following year is concerned.

The Olive Pharm Harvesting 4The farmers here in the Mesara Valley visit their olive trees in order to place organic products under every trees (mostly derived from animal leftovers). After that we wait for a heavy rain to come so that the olive trees can “swallow their food”.

The Olive Pharm after Harvesting Then follows pruning. This is a difficult process for the farmers. The Olive Pharm Team visited Dionisi in Mesara Valley, where our farm is and discovered that the land is filled with yellow and green beautiful colors. The trees have been fed and the pruning process is ready to take place.

The Olive Pharm Visits Dionysi: The Olive Pharm’s Farm before harvesting in January

The Olive Pharm before harvest After a recent chat with my uncle, concerning olive trees harvesting and care, he mentioned amongst others that the olive tree “is working” the whole year. What he meant is that the olive tree needs great care in order to give more Extra Virgin Olive Oil of the finest quality. He also meant that the olive tree during the whole year gives birth to new branches, which produce the best kind of Extra Virgin Olive Oil.

So a good farmer feels the need to visit the farm every two weeks in order to check the trees and “listen” to what they have to say, what they really need. The Olive Pharm Team picked some photographs from it’s archives and there is going to be a special mention in ” The Olive Pharm Visits” section of this blog.

The Olive Pharm Visits Lefka Ori : Snow is a beauty

Lefka Ori 2After visiting Kapetaniana The Olive Pharm decided to visit Chania, the western side of the island of Crete. If you live in Crete you soon realize that in order to see how snow feels you have to travel. Many miles. So we picked Lefka Ori, which means White Mountains… because of the precious snow.

Lefka Ori 3We decided to follow the route by nothern Crete and the view was spectacular, watching the sea during our road trip.

Lefka Ori 1We stayed in a lovely resort: Lefkoritis. The owner and his family made the trip an exquisite experience. We tasted traditional cretan recipes. In Chania the food is really tasty. People  there enjoy healthy nutrition. The owner also recommended to walk around the beautiful valley and his horse farm.

The Olive Pharm Visits Kapetaniana : Blessed Land

Kapetaniana 6Members of The Olive Pharm Team decided to visit Kapetaniana: the Blessed Land. This happened this Januar just before the extra virgin olive oil harvesting. Every farmer needs vacation in winter before or after the harvesting!

Kapetaniana 3Kapetaniana is a village near Dionisi, where The Olive Pharm is and we picked it because it combines two magical beauties : the sea and the mountains together. There is also a variety of tasty cretan products to buy, such as honey, cheese, meat. There is also a lovely resort at Kapetaniana, named Thalori. Markos and Popi, the two friendly owners of the resort welcomed us warmly and made our trip a great success.

Kapetaniana 1We didn’t know the variety of activities one can have at Kapetaniana. One can climb the moutains, go hiking, join a jeep ride and in the summer, swimming is also an option. We believe all of the above is enough for Kapetaniana to deserve the title ‘Blessed Land’.

And something to think about: The residents of Kapetaniana live until the age of 100 years. They eat the Mesara‘s products and the breathe the fresh air of the mountains.
